the best exercises for what you were wanting ( an pretty much everyone ), are full body lifts. squats, deadlift, presses, anything that uses a large amount of muscle groups.

They're the same motions as with barbells...just less weight.

squats you put one leg in front of you and keep the weights at your side.
Check youtube, there is a SHITload of videos for full body dumbbell exercises, its what i use.
Also, http://exrx.net/ is by far one of the best nonbiased sites.
Dont worry you wont get bulky unless you increase your food intake and weight pushed.
