Your enchant and gem choices all seem spot on aside from your boots. I really can't seem to recall a time where I have wished I could run faster from fires in a raid over the extra crit rate. The rest of your gear seems pretty on par with Ulduar hardmode raiders so that shouldn't be a problem. I don't really like theorycrafters personally- I admire the dedication and the skill it takes to research, but at the end of the day having keen environmental awareness and an adaptive mindset will always win in the end. That's not to say you don't have those, too, but they are definitely more important.
All this being said, we do currently have two shadow priests that raid fairly consistently. Although there are nights where myself or Nouhstekehue cannot make it, one of us almost always picks up the slack. I don't see us ever wanting more than two shadow priests per raid night so when both of us are online I would have to assume you would be sitting out. However, I am fairly certain we are looking for a healing priest back-up, so being able and willing to switch between the two specs throughout the raid week would definitely be a bonus on nights Steke or I are unavailable.
Definitely worth a trial imo, though I must admit finding a steady raid spot may be difficult if you aren't willing to main spec holy/disc.
